If there was one vegetable I could write a love letter to, it would be the potato. So much taste, so much potential! Also, the only "vegetable" my husband will eat without a fuss. 

There's so many different ways of cooking potatoes in India, I thought it deserved it's very own class! You can make a curry with it. Or you can add a few curry leaves and tadka ingredients and let the potatoes shine. Need to hide a vegetable the family refuses to eat? Potato to the rescue! 

In this class we cover three basics that get cooked in my home most weeks. These are simple dishes that come together in minutes and can also be used for a variety of leftover makeovers. Let's toast to the potatoes in this class :)
